01 - 1 box (15.25 oz) white or yellow cake mix
02 - 1 cup water
03 - 1/3 cup vegetable oil
04 - 3 large eggs

→ Lime Layer

05 - 1 box (3 oz) lime-flavored gelatin
06 - 1 cup boiling water
07 - 1/2 cup cold water

→ Topping

08 - 2 cups heavy whipping cream
09 - 1/4 cup powdered sugar
10 - 1 tsp vanilla extract
11 - Zest of 1 lime for garnish
12 - Optional: thin lime slices for decoration

# How to Prepare:

01 - Preheat oven to 350°F. Grease a 9x13-inch baking pan thoroughly.
02 - In a large bowl, combine cake mix, water, vegetable oil, and eggs. Beat according to package directions until smooth. Pour batter into prepared pan.
03 - Bake for 28-32 minutes, or until a toothpick inserted into the center comes out clean. Remove from oven and allow to cool for 15 minutes.
04 - Using the handle of a wooden spoon, poke holes evenly across the entire cake surface, spacing approximately 1 inch apart.
05 - Dissolve lime gelatin in boiling water, stirring until completely dissolved. Add cold water and mix well.
06 - Slowly pour the gelatin mixture over the warm cake, allowing it to seep into the poked holes.
07 - Refrigerate for at least 1 hour, or until completely chilled and gelatin has set.
08 - In a chilled bowl, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Alternatively, use prepared whipped topping.
09 - Spread whipped cream evenly over the chilled cake. Garnish with fresh lime zest and optional lime slices.
10 - Slice cake and serve cold. Refrigerate leftovers.

# Expert Advice:

01 -
  • The contrast between tangy lime and fluffy cream is absolutely addictive
  • Make it ahead and let the refrigerator do all the heavy lifting
02 -
  • Wait the full 15 minutes after baking before poking or the holes will just close back up
  • Pour the gelatin slowly, rushing makes it pool on top instead of soaking in properly
03 -
  • Chill your mixing bowl and beaters for 10 minutes before whipping cream for faster, fluffier results
  • The wooden spoon handle trick works better than a fork or skewer for making substantial holes
