01 - Preheat oven to 425°F. Line a baking sheet with parchment paper.
02 - In a large bowl, toss Brussels sprouts with olive oil, salt, pepper, and garlic powder until well coated.
03 - Spread the Brussels sprouts on the prepared baking sheet in a single layer. Scatter diced beef bacon over the top.
04 - Roast for 20-25 minutes, stirring halfway through, until Brussels sprouts are golden and beef bacon is crisp.
05 - Remove from oven. Transfer to a serving dish and garnish with parsley and Parmesan cheese if desired. Serve hot.
