# How to Prepare:

01 - Whisk together soy sauce, hoisin sauce, sesame oil, rice vinegar, honey, and chili flakes in a small bowl. Set aside until ready to use.
02 - Heat a non-stick skillet or wok over medium-high heat. Add a splash of oil and sauté ginger and garlic for 30 seconds until fragrant.
03 - Add sliced shiitake mushrooms to the skillet and cook for 3-4 minutes until softened and beginning to brown.
04 - Add julienned carrot and sliced bell pepper to the pan. Sauté for 2-3 minutes until vegetables are crisp-tender.
05 - Pour the prepared sauce over the vegetables. Toss well to coat evenly and cook for 1-2 minutes until everything is glazed and heated through.
06 - Remove from heat immediately and stir in sliced green onions until just combined.
07 - Spoon the mushroom mixture into prepared lettuce leaves. Top with toasted sesame seeds and fresh cilantro leaves.
08 - Arrange wraps on a serving platter and serve immediately while lettuce remains crisp.

# Expert Advice:

01 -
  • Everything cooks in one pan and comes together in under 20 minutes
  • The mushrooms get caramelized and savory while the vegetables stay bright and crunchy
  • These wraps look impressive but are incredibly forgiving and customizable
02 -
  • Dry your mushrooms before cooking, or they will steam instead of sauté and miss out on that caramelized flavor
  • Do not overcook the vegetables, as you want them to maintain texture for contrast against the soft lettuce
  • Serve immediately after assembling, or the lettuce will wilt from the heat of the filling
03 -
  • Toasting your sesame seeds in a dry pan for 2 minutes before serving makes a huge difference in flavor
  • If the filling seems too salty, balance it with an extra pinch of honey or a squeeze of fresh lime juice
